"Perogies are reasonable in price, paired with vegetables they make an attractive healthy meal. You may make this recipe ahead, pop it in the fridge, bring out 15 minutes before baking to bring the dish to room temperature. Dinners ready in 45 minutes. Use whatever vegetables you like -I chose these because the varied colours make this not only tasty but attractive too."

Step by Step Method
Step 1
Bring a large pot of water to boil, add perogies, makesure they don't stick to the bottom of the pot
Step 2
Return water to a boil, as soon as the perogies start to float add carrote, turn heat down and simmer 5 minutes
Step 3
Drain the carrots and perogies, set aside
Step 4
Meanwhile add a teaspoon of oil to a skillet and saute the onions and mushrooms for 5 minutes , add peppers fry anothe 2 minutes
Step 5
Use an oven proof 9X14x3 inch casserole Spoon into it the onions, mushrooms, perogies and carrots. Mix gently.
Step 6
Arrange the broccoli, cauliflower and tomatoes artistically on top of the perogies
Step 7
Sprinkle evenly with the cheese
Step 8
Cover and bake in 350f oven for 30 minutes, remove foil continue baking for another 15 minutes or until the cheese has melted and is golden
Step 9
Serve with salsa, sour cream and bacon bits
