Step 1: Bring a large pot of water to boil, add perogies, makesure they don't stick to the bottom of the pot
Step 2: Return water to a boil, as soon as the perogies start to float add carrote, turn heat down and simmer 5 minutes
Step 3: Drain the carrots and perogies, set aside
Step 4: Meanwhile add a teaspoon of oil to a skillet and saute the onions and mushrooms for 5 minutes , add peppers fry anothe 2 minutes
Step 5: Use an oven proof 9X14x3 inch casserole Spoon into it the onions, mushrooms, perogies and carrots. Mix gently.
Step 6: Arrange the broccoli, cauliflower and tomatoes artistically on top of the perogies
Step 7: Sprinkle evenly with the cheese
Step 8: Cover and bake in 350f oven for 30 minutes, remove foil continue baking for another 15 minutes or until the cheese has melted and is golden
Step 9: Serve with salsa, sour cream and bacon bits
