Ingredients

The ingredients are:
  • 2 pounds perogies, potato and cheese (1 kilo)
  • 1 1/2 cups carrots, baby (cleaned)
  • 1 1/2 cups onions, chopped
  • 1 teaspoon oil (vegetable oil)
  • 1 1/4 cups mushrooms, fresh (cleaned, sliced_
  • 2 banana peppers, chopped
  • 2 jalapeno peppers (seeded, membrane removed, finely chopped)
  • 1 1/2 cups broccoli, raw (florets)
  • 1 cup cauliflower, fresh (florets)
  • 16 cherry tomatoes
  • 2 cups cheddar cheese, grated
  • 6 tablespoons salsa (of your choice)
  • 6 tablespoons sour cream
  • 6 tablespoons bacon bits (optional)

How to Make

  • Step 1: Bring a large pot of water to boil, add perogies, makesure they don't stick to the bottom of the pot

  • Step 2: Return water to a boil, as soon as the perogies start to float add carrote, turn heat down and simmer 5 minutes

  • Step 3: Drain the carrots and perogies, set aside

  • Step 4: Meanwhile add a teaspoon of oil to a skillet and saute the onions and mushrooms for 5 minutes , add peppers fry anothe 2 minutes

  • Step 5: Use an oven proof 9X14x3 inch casserole Spoon into it the onions, mushrooms, perogies and carrots. Mix gently.

  • Step 6: Arrange the broccoli, cauliflower and tomatoes artistically on top of the perogies

  • Step 7: Sprinkle evenly with the cheese

  • Step 8: Cover and bake in 350f oven for 30 minutes, remove foil continue baking for another 15 minutes or until the cheese has melted and is golden

  • Step 9: Serve with salsa, sour cream and bacon bits
