Step by Step Method

Step 1

Preheat oven to 300ºF. Lightly grease 10” pie plate.

Step 2

In a large mixing bowl beat egg whites and baking powder until soft peaks form. Add cream of tartar, beating constantly. Add sugar, 1 tbsp. at a time, beating until stiff peaks form. Fold in graham crackers and 1 cup of pecans (reserve rest for garnish). Spoon into pie plate. Bake 30 minutes or until wooden pick inserted in center comes out clean. Cool completely.

Step 3

Whip cream adding vanilla and icing sugar as it begins to thicken. Continue beating until stiff peaks form. Top pie with whipped cream. Sprinkle with reserved pecans; refrigerate until served. This is best made a day or two ahead.

"Something wonderful" is an understatement, Crocus. This is one of our favorite pies. We first had it at Luby's Cafeteria, fell in love instantly, and the rest is history. This is the dessert that everyone wants to bring to a family gathering -- just to make sure there is at least one on the table. If you are new to the recipe, be sure to listen when Crocus says it is best made a day or two early. The ingredients simply melt together into a chewy sweet morsel similar to a brownie topped with whipped cream. Heaven on a plate!
