Step by Step Method

Step 1

In a medium sized bowl, combine coconut and pecans; set aside.

Step 2

In a heavy saucepan over medium high heat, stir sugar, evaporated milk, corn syrup and butter.

Step 3

Cook and stir until mixture comes to a full rolling boil -- let boil and stir for 3 minutes.

Step 4

Remove pan from heat and stir in vanilla and coconut and pecan mixture.

Step 5

Stir off the heat for about 4 minutes, until mixture starts to cool and thicken.

Step 6

Drop by large spoonfuls on wax paper.

Step 7

Let harden completely -- about an hour to an hour and a half -- before serving.

Soooo easy to make and I love that these goodies are no-bake. Made these to go with my cookie/candy tray that I take to the grandkids and the adults too. : ) They're gonna love these. : )

I make the chocolate no bake cookies all the time and knew this would be a big hit with the wife and I so I whipped these up when company was coming to have for an additional sweet after out lunch. We loved them, and even my granddaughter wanted another one!
