Ingredients

The ingredients are:
  • 5 egg whites (large, at room temperature)
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon cream of tartar
  • 1 cup granulated sugar
  • 15 graham crackers (broken in 1/2” pieces)
  • 1 1/4 cup pecans, chopped (toasted and cooled, divided)
  • 1 cup heavy whipping cream
  • 4 tablespoons icing sugar
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Preheat oven to 300ºF. Lightly grease 10” pie plate.

  • Step 2: In a large mixing bowl beat egg whites and baking powder until soft peaks form. Add cream of tartar, beating constantly. Add sugar, 1 tbsp. at a time, beating until stiff peaks form. Fold in graham crackers and 1 cup of pecans (reserve rest for garnish). Spoon into pie plate. Bake 30 minutes or until wooden pick inserted in center comes out clean. Cool completely.

  • Step 3: Whip cream adding vanilla and icing sugar as it begins to thicken. Continue beating until stiff peaks form. Top pie with whipped cream. Sprinkle with reserved pecans; refrigerate until served. This is best made a day or two ahead.
