Step 1: Preheat oven to 300ºF. Lightly grease 10” pie plate.
Step 2: In a large mixing bowl beat egg whites and baking powder until soft peaks form. Add cream of tartar, beating constantly. Add sugar, 1 tbsp. at a time, beating until stiff peaks form. Fold in graham crackers and 1 cup of pecans (reserve rest for garnish). Spoon into pie plate. Bake 30 minutes or until wooden pick inserted in center comes out clean. Cool completely.
Step 3: Whip cream adding vanilla and icing sugar as it begins to thicken. Continue beating until stiff peaks form. Top pie with whipped cream. Sprinkle with reserved pecans; refrigerate until served. This is best made a day or two ahead.
