Step 1

Place oil in a pan and add peas, onions, mint, water and salt. Cover and bring to a boil, turn down the heat and simmer for a few minutes until the peas are done. Serve hot.

I love minted peas, especially with lamb. This recipe with the added shallot takes peas one step further. When I read 1 tablespoon of water I thought "Really"?. Yes really, that is all that is needed with the ice on the frozen peas. I turned the stove on high until there was a boil sound then turned to medium low for a further 3 minutes - perfect! Thanks limeleaf this recipe will be a regular with my lamb recipes. It was super with my fish too.

These peas were such a great addition to our Easter dinner. I really looked forward to serving something different this year, so I came onto Zazz to plan my Easter menu. These peas really stood out as something I would like to try. With the addition of the onion and mint, these pleased my family, and I got all kinds of compliments at dinnertime! I can't wait to serve them with lamb.
