Step by Step Method

Step 1

Saute ... Add half of the butter to a saute pan (non-stick preferred); and, bring to medium heat. Add the potatoes, onions, a pinch of salt and pepper; and, saute for 3-4 minutes. You do NOT want the potatoes or onions to brown; so, stir often.

Step 2

Finish ... Then, add the peas and garlic; and, cook another minute. Add the broth; cover and cook 5 minutes. Then, remove the lid; add the pimentos, remaining butter, season with salt and pepper; and toss until the butter is melted. Cook just a minute; then, add the parsley and parmesan cheese - toss and transfer to a serving bowl.

Step 3

Serve and ENJOY! ... Certainly, nothing fancy; just an old family favorite. And, it goes with just about anything.
