Ingredients

The ingredients are:
  • 9 ounces frozen peas (1 1/2 cups, thawed)
  • 1 can (15 ounce) diced potatoes (drained and rinsed)
  • 3 tablespoon pimentos, chopped
  • 2 small shallots, thin sliced
  • 1 small garlic clove, minced
  • 3 to 4 tablespoons grated parmesan cheese (fine grated)
  • 1/3 cup chicken broth
  • 2 tablespoons parsley, chopped
  • 2 tablespoon butter
  • Pepper, to taste
  • Kosher salt, to taste
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Saute ... Add half of the butter to a saute pan (non-stick preferred); and, bring to medium heat. Add the potatoes, onions, a pinch of salt and pepper; and, saute for 3-4 minutes. You do NOT want the potatoes or onions to brown; so, stir often.

  • Step 2: Finish ... Then, add the peas and garlic; and, cook another minute. Add the broth; cover and cook 5 minutes. Then, remove the lid; add the pimentos, remaining butter, season with salt and pepper; and toss until the butter is melted. Cook just a minute; then, add the parsley and parmesan cheese - toss and transfer to a serving bowl.

  • Step 3: Serve and ENJOY! ... Certainly, nothing fancy; just an old family favorite. And, it goes with just about anything.
