Step by Step Method

Step 1

Heat oven to 325° Fahrenheit.

Step 2

Get out a cookie sheet and line it with a piece of parchment paper.

Step 3

Mix the flours, baking soda, cinnamon, ginger, cloves, and salt in a large bowl.

Step 4

Get another large bowl. Add the brown sugar, peanut butter, and the butter. Beat together until light and creamy, for approximately 2 to 3 minutes.

Step 5

Next, beat in the egg yolk. Then beat in the molasses and vanilla.

Step 6

Beat in the flour mixture a little at a time. It will be very, very crumbly. Keep beating for 3 to 5 more minutes. It will still look crumbly when done beating.

Step 7

You need to make 1 1/2 inch balls. Because it's crumbly, just squeeze into a ball shape with your hands. You won't be able to roll it in your hands like you may with other does.

Step 8

Bake these for 10 to 12 minutes. The tops should be firm and cracked. The middles will be soft.

Step 9

Transfer to a cooling rack when they are done cooking.

These cookies are so tasty and easy to prepare...they weren't overwhelming with peanut butter flavor...I loved that it makes a small batch...it worked perfect for my Christmas cookie gift box for a few friends and I had some leftover for our cookie dish...yum...thanks for sharing your recipe...

I like how these cookies don't have a lot of fat considering the low amount of butter. The molasses and spices provide the perfect balance of spice and the peanut butter is in the middle ground. These made my cup of tea much more enjoyable. Thanks so much, WAIGEN, for sharing. Made it for FYC
