  • 1 teaspoon baking soda

  • 1/4 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1/4 cup peanut butter (creamy)
  • 2 tablespoons unsalted butter (softened)
  • 1 egg yolk
  • 2 tablespoons molasses
  • 1/2 teaspoon vanilla extract

How to Make

  • Step 1: Heat oven to 325° Fahrenheit.

  • Step 2: Get out a cookie sheet and line it with a piece of parchment paper.

  • Step 3: Mix the flours, baking soda, cinnamon, ginger, cloves, and salt in a large bowl.

  • Step 4: Get another large bowl. Add the brown sugar, peanut butter, and the butter. Beat together until light and creamy, for approximately 2 to 3 minutes.

  • Step 5: Next, beat in the egg yolk. Then beat in the molasses and vanilla.

  • Step 6: Beat in the flour mixture a little at a time. It will be very, very crumbly. Keep beating for 3 to 5 more minutes. It will still look crumbly when done beating.

  • Step 7: You need to make 1 1/2 inch balls. Because it's crumbly, just squeeze into a ball shape with your hands. You won't be able to roll it in your hands like you may with other does.

  • Step 8: Bake these for 10 to 12 minutes. The tops should be firm and cracked. The middles will be soft.

  • Step 9: Transfer to a cooling rack when they are done cooking.
