Step by Step Method

Step 1

Rinse and thaw peas.

Step 2

Rinse and cut water chestnuts into quarters.

Step 3

Put both peas and chestnuts in medium size bow.l.

Step 4

Melt butter in small saute' pan, add almonds and saute till light brown.

Step 5

Remove from heat and let cool.

Step 6

Once cool add almonds to peas and water chestnuts; add mayonnaise, sour cream and sugar.

Step 7

You may want to add more sugar according to your own taste.

Step 8

Serve immediately or keep refrigerated till needed.

Wow... This was just the perfect salad to serve on a hot Christmas Day! I used sliced almonds and they worked so well, but everything else was as written. The sweetness from the peas, sugar and mayonnaise paired so well with the sour cream and cut out any sourness from the cream turning it into a delicious and creamy dressing. The flavor of the baby peas matched perfectly with the texture and crunch of the water chestnuts ~ all together it made for a beautiful salad that was loved by everyone who ate it. This is a keeper for me, and was even better the next day, and I should know... because I demolished the leftover's all by myself!

Daily Inspiration

I have always loved pea salad and this version is really tasty. We loved the crunchy texture of the water chestnuts and toasted almonds. Made to go with some pork chops and spicy ranch potatoes. YUM!
