"This recipe called for tagliatelle or pappardelle pasta. I use any pasta that I have on hand, linguine, penne, rotini etc. It is all about the sauce."

Step by Step Method

Step 1

Cook pasta in boiling salted water, reserving 3/4 cup pasta water.

Step 2

Combine oil and onions in separate pot; saute over medium heat until onion turns golden, about 5 minutes.

Step 3

Add peas and season with salt and pepper.

Step 4

Stir pea mixture well and then add about 1/2 cup water.

Step 5

Cook over medium heat until peas are tender, about 6 - 8 minutes.

Step 6

When peas are tender, remove from heat.

Step 7

Puree half the pea mixture.

Step 8

Combine pureed peas with whole peas in pot.

Step 9

Add 3/4 cup reserved pasta water to peas.

Step 10

When pasta is done, drain, and toss with sauce and serve at once with a grating of cheese.

I made this recipe on 11/14/13 as part of mine and my SO's dinner,and most importantly the Billboard Tag game.Since it was just two of us,the recipe was reduce by half.For the pasta, Angel Hair was used.I didn't have a way to puree the peas,so half of them were mashed with a fork. And the recipe was continued as written. We both really like cheese,so in the pasta/pea mixture a blend of Romano/Parmesan was used and then right before serving it was topped with finely shredded Parmesan.Both my SO and myself give this a good solid 4*'s. I certainly will be making this again. Thanks for posting and, " Keep Smiling :) "

Very nice side dish, I used multigrain Fusilli pasta and sharp old cheddar for the cheese. Just made 4 ounces of pasta with 1 cup of peas and the onion cus it was just for a side for the two of us. We enjoyed it and will make it again.
