Ingredients

The ingredients are:
  • 4 tablespoons oil (extra virgin olive oil)
  • 1 onion, finely chopped
  • 2 1/2 cups peas (frozen or 1 3/4 lb fresh peas)
  • Salt and freshly ground pepper
  • 10 ounces dry pasta (of your choice)
  • Grated cheese, for serving

How to Make

  • Step 1: Cook pasta in boiling salted water, reserving 3/4 cup pasta water.

  • Step 2: Combine oil and onions in separate pot; saute over medium heat until onion turns golden, about 5 minutes.

  • Step 3: Add peas and season with salt and pepper.

  • Step 4: Stir pea mixture well and then add about 1/2 cup water.

  • Step 5: Cook over medium heat until peas are tender, about 6 - 8 minutes.

  • Step 6: When peas are tender, remove from heat.

  • Step 7: Puree half the pea mixture.

  • Step 8: Combine pureed peas with whole peas in pot.

  • Step 9: Add 3/4 cup reserved pasta water to peas.

  • Step 10: When pasta is done, drain, and toss with sauce and serve at once with a grating of cheese.
