"I found this recipe in an old woman's weekly cookbook, this is just the salad to serve on the warm summer evenings. I like to serve this chilled on a hot evening, I add the first half od the dressing, then add the later dressing just before serving."

Step by Step Method

Step 1

Cook pasta in saucepan of boiling water until tender; drain and rinse under cold water; drain again.

Step 2

Meanwhile make the Caesar Salad Dressing.

Step 3

Cook the bacon in small fry pan, stirring until browned and crisp; drain on absorbent paper.

Step 4

Place the pasta and bacon in a large bowl with the lettuce, egg and avocado; pour over half the Caesar Dressing and toss gently.

Step 5

Divide the salad among serving dishes and drizzle with remaining dressing and sprinkle with the parmesan cheese. Alternatively serve in one large bowl.

Step 6

To make the Caesar Salad Dressing; Blend or process the egg, garlic, lemon juice, dijon mustard (not course mustard yet) and anchovies until smooth. With motor running, gradually add the oil in a thin steady stream and process until dressing thickens, stir in coarse grain mustard if using.

What a great "pasta Caesar salad". I had to look up what cos was, and found that it was romaine, which definitely gave this a nice added element I don't think I have ever had in a pasta salad before. We did not add the hard boiled eggs (personal preference) or anchovies (allergy reasons), and used about half the dressing. It was enough for us, giving it a wonderful subtle flavor. I could see some people liking the full amount of dressing for a stronger flavor, especially if they favor a lot of dressing on their salad. All the ingredients are so good together here; the bacon and avocado are real stars!
