Step 1

Preheat oven to 400 degrees F.

Step 2

In a bowl toss potatoes with oil, salt and pepper.

Step 3

Place potatoes, cut side up, on a wire rack inside a rimmed cookie sheet. Roast until golden brown (30-40 minutes); transfer back to the bowl and toss with parmesan. Return potatoes to rack and roast until the parmesan is brown and crisp (10-15 minutes).

Step 4

Toss potatoes in the same bowl again with parsley, lemon juice, and red pepper flakes. Top with the lemon zest before serving.

Loved these potatoes. The cheese crisped up and with the lemon the flavor was great! I didn't add the red pepper flakes this time around but I may use them another time.
