Ingredients

The ingredients are:
  • 3 pounds potatoes (baby Yukon gold, halved)
  • 1/4 cup olive oil
  • Kosher salt
  • Pepper
  • 4 ounces grated Parmesan cheese
  • 3/4 cup chopped parsley
  • 1 tablespoons grated lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon crushed red pepper flakes

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: In a bowl toss potatoes with oil, salt and pepper.

  • Step 3: Place potatoes, cut side up, on a wire rack inside a rimmed cookie sheet. Roast until golden brown (30-40 minutes); transfer back to the bowl and toss with parmesan. Return potatoes to rack and roast until the parmesan is brown and crisp (10-15 minutes).

  • Step 4: Toss potatoes in the same bowl again with parsley, lemon juice, and red pepper flakes. Top with the lemon zest before serving.
