Step by Step Method

Step 1

Combine the water and parsnips in a nonstick skillet over medium-high heat. Bring to a simmer. Cover, and cook 2 minutes or until the water evaporates.

Step 2

Uncover; stir in the olive oil, pear, thyme, and salt. Cook 3 minutes or until the parsnips are browned and tender. Remove from heat.

Step 3

Combine the Dijon mustard and apple cider vinegar; stir into the parsnip mixture.

Oh, so good! I’ve been making more and more dishes with parsnips and I find it to be an excellent vegetable and it’s becoming one of my favorites. This dish fit into that excellent level. So good! Because I have quite a few pears hanging in our fruit bowl, I used 2 pears, 1 non-red Anjou and 1 Bartlett. Thank you, Breezer, for sharing! Made it for Only the Lonely.
