  • 2 cups parsnips (peeled and cut diagonally into 1/2 inch pieces)
  • 3 tablespoons water
  • 1 tablespoon olive oil
  • 1 1/2 cups pears (red Anjou pear, chopped, about 1 medium)
  • 1 teaspoon chopped fresh thyme
  • 1/4 teaspoon kosher salt
  • 1 tablespoon Dijon mustard (grainy)
  • 2 teaspoon apple cider vinegar

How to Make

  • Step 1: Combine the water and parsnips in a nonstick skillet over medium-high heat. Bring to a simmer. Cover, and cook 2 minutes or until the water evaporates.

  • Step 2: Uncover; stir in the olive oil, pear, thyme, and salt. Cook 3 minutes or until the parsnips are browned and tender. Remove from heat.

  • Step 3: Combine the Dijon mustard and apple cider vinegar; stir into the parsnip mixture.
