Step 1: Combine the water and parsnips in a nonstick skillet over medium-high heat. Bring to a simmer. Cover, and cook 2 minutes or until the water evaporates.
Step 2: Uncover; stir in the olive oil, pear, thyme, and salt. Cook 3 minutes or until the parsnips are browned and tender. Remove from heat.
Step 3: Combine the Dijon mustard and apple cider vinegar; stir into the parsnip mixture.
