Step by Step Method
Step 1
In a large skillet, cook the bacon until it's crisp.
Step 2
Put the bacon on paper towels and reserve 3 tablespoons of the bacon grease.
Step 3
Add the green pepper and onion to the drippings and cook until translucent.
Step 4
Add corn, lima beans and water.
Step 5
Simmer for 10-15 minutes or until the vegetables are almost tender, adding more water if necessary.
Step 6
Stir in tomatoes and cook just until tomatoes are heated through.
Step 7
Season to taste.
Step 8
Add in crumbled bacon.
