  • 2 cups frozen corn
  • 8 ounces frozen lima beans
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup water
  • 1 cup tomatoes, cut into wedges
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: In a large skillet, cook the bacon until it's crisp.

  • Step 2: Put the bacon on paper towels and reserve 3 tablespoons of the bacon grease.

  • Step 3: Add the green pepper and onion to the drippings and cook until translucent.

  • Step 4: Add corn, lima beans and water.

  • Step 5: Simmer for 10-15 minutes or until the vegetables are almost tender, adding more water if necessary.

  • Step 6: Stir in tomatoes and cook just until tomatoes are heated through.

  • Step 7: Season to taste.

  • Step 8: Add in crumbled bacon.
