Step by Step Method

Step 1

Position rack in center of oven and preheat the oven to 350 degrees F. In a medium ovenproof saucepan, melt the butter over medium heat. Add the onion and cook, stirring, until soft, about 3 to 4 minutes. Add the rice and cook, stirring, until opaque and nutty in aroma, about 3-4 minutes. Add garlic; stir 1 minute. Add the water, chicken broth, and salt and pepper; and bring to a boil. Cover the pan with a tight-fitting lid. Transfer to the oven, and bake until the rice is tender and the liquid is absorbed, 25 to 30 minutes.

Step 2

Remove the pan from the oven and add the peas and scallions; toss gently to combine then replace the cover and allow the rice to sit undisturbed, for 5 to 10 minutes. Serve hot.

I love Rice Pilaf and peas so naturally I wanted to try this. I used brown rice and packets of Herb Ox powdered chicken mixed with water to make up for the broth. (They are sodium free so it cuts out the sodium) It was a great side to baked chicken that I was having. I used a mix of peas and carrots instead of just peas for a little color. I will make this many more times, because it will go with about any meat or fish. It's nice with a recipe like this where you can change up the vegetables to give it a different taste too every time. A really delicious rice pilaf, we loved it, had a lovely freshness with the frozen peas and green onion. I happened to have a box of beef broth open left from another recipe, so used it instead of chicken, it was wonderful. I also used brown rice, turned out with a lovely nutty flavour and did not bother blanching the peas. Just made half a recipe, just right for the two of us. i will be making this often, easy and so flavourful !!
