Step by Step Method
Step 1
Preheat oven to 400 degrees F (set oven rack to lowest position). Grease a 13 x 9-inch glass baking dish.
Step 2
Place the egg in a shallow bowl then place the seasoned breadcrumbs in another shallow bowl.
Step 3
Dip chicken in egg then coat in the bread crumbs pressing down with fingers to adhere the coating firmly to the chicken.
Step 4
Bake uncovered 20 minutes (if using a metal baking dish bake for 25 minutes).
Step 5
Remove from oven pour the marinara sauce over chicken, then top each breast with 2 mozzarella slices. Return to oven and bake an additional 15-20 minutes or until chicken is no longer pink.
