Step by Step Method

Step 1

In skillet heat lard and add flour. Brown slightly

Step 2

Add spices. Cook

Step 3

Add stock. Thicken

Step 4

Put 1/2 cup of sauce in pam sprayed 9x13 casserole

Step 5

Soften tortillas in chili sauce

Step 6

Fill each one with cheese and onions

Step 7

Put folded side down. Repeat

Step 8

Pour sauce over top and and sprinkle remaining cheese over top

Step 9

Bake 350 for 30 minutes

Step 10

Use topping if you wish

Super simple and a really good sauce. I usually don't like cheese enchiladas, but these were great and so reminiscent of the enchiladas at TeePee. The only change I made was to semi-fry the tortillas, because mine kept falling apart if just dipped straight into the sauce.

Daily Inspiration

We really enjoyed these enchiladas -- such a nice change from my chicken enchiladas. I made one change and that was to use beef broth vs. chicken broth as that's what I had on hand. I loved the sauce, but next time I would reduce the chili powder a little. I had leftover velveeta cheese and it was perfect with the cheddar cheese. I will definitely be making these enchiladas again. : )

We really enjoyed these enchiladas. The sauce was very easy to make. We used spanish sweet onions and we could hardly taste the onions even though I put in a lot. Moral I learned is to use regular onions in enchiladas. My DH really loved these.
