Ingredients

The ingredients are:
  • FOR CHILI GRAVY
  • 3 tablespoons lard (can use oil)
  • 1/4 cup flour
  • 1/2 teaspoon pepper
  • 1 teaspoons salt
  • 1 teaspoons cumin
  • 2 teaspoons garlic powder
  • 2 tablespoons chili powder (dark)
  • 1/2 teaspoon oregano, Mexican
  • 2 cups chicken broth
  • FOR ENCHILADAS
  • 588 grams tortillas (12 corn tortillas, 6 inch)
  • 1 1/2 cups shredded Velveeta cheese
  • 1 1/2 cup shredded cheddar cheese
  • 1 onion, chopped, medium
  • Toppings:
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • 1/4 black olives,sliced
  • 1 tablespoons cilantro, minced

How to Make

  • Step 1: In skillet heat lard and add flour. Brown slightly

  • Step 2: Add spices. Cook

  • Step 3: Add stock. Thicken

  • Step 4: Put 1/2 cup of sauce in pam sprayed 9x13 casserole

  • Step 5: Soften tortillas in chili sauce

  • Step 6: Fill each one with cheese and onions

  • Step 7: Put folded side down. Repeat

  • Step 8: Pour sauce over top and and sprinkle remaining cheese over top

  • Step 9: Bake 350 for 30 minutes

  • Step 10: Use topping if you wish
