"This recipe is a crust-less, fluffy, flavorful Quiche. Amount of cheese is a personal choice, I use 1 cup and a pastry crust can be used as well."

Step by Step Method

Step 1

Preheat oven to 400°F degrees.

Step 2

Melt the butter in a heavy nonstick skillet over medium high heat. Sauté onions and mushrooms for 5 minutes, or until tender, remove from heat and allow to cool slightly.

Step 3

Whisk the eggs, milk and nutmeg in another bowl. Add cheese and stir to combine.

Step 4

Spray a deep dish pie pan with non-stick spray and pour egg and cheese mixture into dish and add diced bacon, onion and mushrooms.

Step 5

Bake for 25-35 minutes or until center is set.

We enjoyed this quiche just with biscuits for a light dinner. I only used Monterey Jack cheese (1 cup) and 5 strips of bacon which worked well for us. Thanks for sharing!

Lovely crustless quiche I also added in a clove of garlic. This was made in memory of our dear Papa_D who recently passed away. RIP Papa_D you will be missed!

A really good crustless quiche that stands alone or pairs with sides of selected fruit, breads, and potatoes for a company brunch. We followed Papa_D's suggestion and used one cup of cheese, but reduced the bacon to 6 thick slices. The result was indeed flavorful and tender as promised. Made as a silent farewell to our cooking friend Papa_D.
