"These cookies are a great pick-me-up for that afternoon slump. For best results, remove from the oven when the edges are just lightly browned. This will produce a chewy, moist cookie. Cooking time is per cookie sheet."

Step by Step Method
Step 1
Preheat the oven to 350 degrees.
Step 2
Microwave the butter in a microwave-safe bowl at high for 30 to 40 seconds or until the butter is partially melted. (Butter will have lumps).
Step 3
Whisk together the partially melted butter, honey, eggs, and vanilla extract in a large bowl.
Step 4
Whisk together the flour, baking powder, and table salt. Stir in the oats, chocolate morsels, pecans, sugar, brown sugar, pumpkin seeds, and cranberries.
Step 5
Add the flour mixture to the butter mixture, stirring just until combined. (Do not overmix). Shape dough into 2-inch balls and place dough balls 1 inch apart on a parchment paper-lined cookie sheet.
Step 6
Bake, in batches, for 15 minutes or until the edges are lightly browned. Cool the cookies on the cookie sheet for 5 minutes; transfer the cookies to wire racks, and let cool completely (about 20 minutes).
