Ingredients

The ingredients are:
  • 1/2 cup butter
  • 1/4 cup honey
  • 3 tablespoons honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cup whole wheat flour (white)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups oats (uncooked regular)
  • 1/2 cup milk chocolate baking chips (morsels)
  • 1/2 cup bittersweet chocolate baking chips (morsels)
  • 1/4 cup pecans (coarsely chopped)
  • 1/4 cup granulated sugar
  • 1/4 cup dark brown sugar, firmly packed
  • 1/4 cup salted pumpkin seeds (roasted)
  • 1/4 cup sweetened dried cranberries.

How to Make

  • Step 1: Preheat the oven to 350 degrees.

  • Step 2: Microwave the butter in a microwave-safe bowl at high for 30 to 40 seconds or until the butter is partially melted. (Butter will have lumps).

  • Step 3: Whisk together the partially melted butter, honey, eggs, and vanilla extract in a large bowl.

  • Step 4: Whisk together the flour, baking powder, and table salt. Stir in the oats, chocolate morsels, pecans, sugar, brown sugar, pumpkin seeds, and cranberries.

  • Step 5: Add the flour mixture to the butter mixture, stirring just until combined. (Do not overmix). Shape dough into 2-inch balls and place dough balls 1 inch apart on a parchment paper-lined cookie sheet.

  • Step 6: Bake, in batches, for 15 minutes or until the edges are lightly browned. Cool the cookies on the cookie sheet for 5 minutes; transfer the cookies to wire racks, and let cool completely (about 20 minutes).
