Step by Step Method

Step 1

Heat bacon grease

Step 2

Add onions, celery and bell pepper

Saute on very low heat for about 15 minutes ,until lightly browned

Add ham ,garlic and spices

Cook for 5 minutes more

Add water and bay leaf and beans

Step 7

Bring up to a boil

Turn down to low and simmer

Stirring occasionally

The closer to done the more stirring you need to do ,may need to add water

Last 30 minutes add smoked sausage and parsley

Step 12

When serving take out bay leaf and sausage, cut sausage into bite pieces
