Step 1: Heat bacon grease
Step 2: Add onions, celery and bell pepper
Step 3: Saute on very low heat for about 15 minutes ,until lightly browned
Step 4: Add ham ,garlic and spices
Step 5: Cook for 5 minutes more
Step 6: Add water and bay leaf and beans
Step 7: Bring up to a boil
Step 8: Turn down to low and simmer
Step 9: Stirring occasionally
Step 10: The closer to done the more stirring you need to do ,may need to add water
Step 11: Last 30 minutes add smoked sausage and parsley
Step 12: When serving take out bay leaf and sausage, cut sausage into bite pieces
