Step by Step Method

Step 1

Roughly chop lobster meat into about 1/2 inch pieces. Place in a large bowl, along with the mayonnaise, lemon juice, and celery. Season with salt and pepper. Mix carefully. Set aside.

Step 2

Place a large skillet over medium heat. Butter hot dog rolls on both sides, and place on the griddle or in skillet. Toast until golden on each side. Transfer rolls to a serving plate.

Step 3

Divide lobster mixture between the 4 rolls, and serve immediately.

Had these today for lunch with a friend. I cut the recipe in half for just the two of us. I didn't add the celery as I like to let the lobster shine through. Delicious and plenty filling. Liked it with the lemon especially. It gave it lots of flavor. You just can't go wrong with these Lobster Rolls!

After our lobster feast I took all the bodies and shelled them and picked out all the meat. I got about 1 pound of meat, so I just scaled down the recipe accordingly. Once the meat was picked out I made up the lobster rolls for lunch. They are great cooked on the New England Style hot dog rolls. If you aren't in New England you can always trim the side of your hot dog rolls and then toast them with a little butter on them and they will work almost as well. We loved making them this way and will continue to do so when we have them again!

Lobster has been on sale here for 5.99 a pound so we got 4 lobsters and cooked them up. I was dying for my first lobster roll of the season and made some this past week for lunch. My friend and I loved them! These are easy and very delicious!
