Ingredients

The ingredients are:
  • 4 1/2 to 5 pounds whole lobster (1 1/4 - 1 1/2 pounds each, cooked and shelled, chilled)
  • 3/4 cup mayonnaise
  • 1 teaspoon lemon juice, freshly squeezed
  • 1/2 rib celery, finely minced (optional)
  • 12 ounces bread rolls (4 New England style hot dog rolls, top split)
  • 1 tablespoon unsalted butter
  • Coarse salt and freshly ground pepper

How to Make

  • Step 1: Roughly chop lobster meat into about 1/2 inch pieces. Place in a large bowl, along with the mayonnaise, lemon juice, and celery. Season with salt and pepper. Mix carefully. Set aside.

  • Step 2: Place a large skillet over medium heat. Butter hot dog rolls on both sides, and place on the griddle or in skillet. Toast until golden on each side. Transfer rolls to a serving plate.

  • Step 3: Divide lobster mixture between the 4 rolls, and serve immediately.
