Step by Step Method

Step 1

Whisk together the eggs, cream, salt, and pepper. Set aside

Step 2

Heat water in the bottom of a double boiler to just a simmer.

Step 3

Add the butter to the top of the double boiler and cook, stirring frequently, until it melts.

Step 4

Stir in the egg mixture and cover the pan.

Step 5

Let cook without lifting the lid for 15 minutes.

Step 6

Uncover the pan and stir

Step 7

Scrambling the eggs, until the desired consistency is reached.

Step 8

While the eggs are cooking

Step 9

Heat the clarified butter in a heavy pan over low heat.

Step 10

Cook, stirring frequently, until it turns dark brown but does not burn (use very low heat).

Step 11

Stir in the vinegar and then serve the butter sauce over the eggs.
