Step 1: Whisk together the eggs, cream, salt, and pepper. Set aside
Step 2: Heat water in the bottom of a double boiler to just a simmer.
Step 3: Add the butter to the top of the double boiler and cook, stirring frequently, until it melts.
Step 4: Stir in the egg mixture and cover the pan.
Step 5: Let cook without lifting the lid for 15 minutes.
Step 6: Uncover the pan and stir
Step 7: Scrambling the eggs, until the desired consistency is reached.
Step 8: While the eggs are cooking
Step 9: Heat the clarified butter in a heavy pan over low heat.
Step 10: Cook, stirring frequently, until it turns dark brown but does not burn (use very low heat).
Step 11: Stir in the vinegar and then serve the butter sauce over the eggs.
