Ingredients

The ingredients are:
  • 6 eggs
  • 8 ounces light cream,(1 cup)
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper,(good dash)
  • 2 tablespoons butter
  • Topping
  • 4 tablespoons clarified butter
  • 1/32 teaspoon tarragon wine vinegar,(3 drops)

How to Make

  • Step 1: Whisk together the eggs, cream, salt, and pepper. Set aside

  • Step 2: Heat water in the bottom of a double boiler to just a simmer.

  • Step 3: Add the butter to the top of the double boiler and cook, stirring frequently, until it melts.

  • Step 4: Stir in the egg mixture and cover the pan.

  • Step 5: Let cook without lifting the lid for 15 minutes.

  • Step 6: Uncover the pan and stir

  • Step 7: Scrambling the eggs, until the desired consistency is reached.

  • Step 8: While the eggs are cooking

  • Step 9: Heat the clarified butter in a heavy pan over low heat.

  • Step 10: Cook, stirring frequently, until it turns dark brown but does not burn (use very low heat).

  • Step 11: Stir in the vinegar and then serve the butter sauce over the eggs.
