Step by Step Method

Step 1

Remove edges of the bread, soak in water for few seconds, squeeze as much water as possible and place it in a bowl.

Step 2

Place the remaining ingredients (up to the feta), except the oil and flour, in the bread bowl. Mix well to evenly blend all the ingredients. If time permits, marinate for approximately an hour.

Step 3

Place some mixture into your hand and shape it into small oval sausage-like shapes which makes approximately 24 qoftes.

Step 4

Roll each qofte in the flour to dust it throughout the surfaces. Place on a cookie sheet or tray; set aside.

Step 5

Heat oil (1/2 – 3/4-inches) in a large skillet for frying the qoftes. Qofte can be deep fried as well.

Step 6

Fry the qofte for 5 -6 minutes on medium flame until qofte are brown on all sides and cooked inside. This may involve frying in 3-batches, depending on the size of your skillet. The size of each qofte will decrease in size, once fried.

Step 7

Remove each from the skillet and drain on paper towels.

Step 8

Serve hot with rice or pilaf, green salad or as a snack with a yogurt dipping sauce of choice.
