"This is such a creamy pudding and so delicious. It does require a bit of time to make but it is so worth it. There are so many nice colors of tapioca pears now, I like the rainbow colors every now and then they do make the pudding look pretty. "

Step by Step Method

Step 1

Soak tapioca in 1 cup of milk in fridge overnight

Step 2

Boil water in a double boiler and on top add tapioca mix and rest of milk and cook over medium low heat for 3 hours stirring occasionally. Take off of heat

Step 3

Beat egg yolks, sugar and vanilla together well and add to tapioca mixture and blend

Step 4

Beat egg whites until stiff in another bowl

Step 5

Using a greased 9 x 9 dish put a layer of tapioca then a layer of stiff egg whites and repeat again

Step 6

Put in a preheated 325 oven for 15 minutes. Keep leftovers if any in fridge afterwards
