Step 1: Soak tapioca in 1 cup of milk in fridge overnight
Step 2: Boil water in a double boiler and on top add tapioca mix and rest of milk and cook over medium low heat for 3 hours stirring occasionally. Take off of heat
Step 3: Beat egg yolks, sugar and vanilla together well and add to tapioca mixture and blend
Step 4: Beat egg whites until stiff in another bowl
Step 5: Using a greased 9 x 9 dish put a layer of tapioca then a layer of stiff egg whites and repeat again
Step 6: Put in a preheated 325 oven for 15 minutes. Keep leftovers if any in fridge afterwards
