"This is an updated recipe from Acadia* my alter ego. Over the years I have modified it a bit. Goes great with steak or eggs."

Step by Step Method
Step 1
Open cans and remove water.
Step 2
Dump potatoes out on a paper towel and blot excessive moisture off.
Step 3
Dice onion.
Step 4
Slice whole canned potatoes in to 1/4 inch slices.
Step 5
Add 1 tablespoon butter to skillet and saute onions for 10 minutes stirring frequently on medium low.
Step 6
Remove onions from heat, set aside.
Step 7
Add oil and remaining butter to pan and then add potato slices.
Step 8
(WARNING: Beware of splatter!!!) Turn heat up to medium high and cook potatoes, flipping frequently allowing potatoes to brown.
Step 9
The longer you keep the potatoes in the pan, the browner they will get. (I cook my potatoes for an hour.)
Step 10
After the potatoes have browned to the desired color, add the onions back into the skillet and mix together.
Step 11
Sprinkle garlic powder and (optional cayenne pepper) over potatoes and mix thoroughly.
Step 12
Cook mixture for another 10 minutes. Serve and enjoy!
