Step by Step Method
Step 1
Make sure the mussels are scrubbed clean and the beards removed.
Step 2
Heat the oil in a heavy pan, add onions and garlic and cook onions until soft; add the chili, tomato paste, wine, tomatoes, sugar, bay leaves and capers and bring to boil, and when boiling reduce the heat and simmer until the tomato sauce thickens.
Step 3
When sauce has thickened a little add the mussels, bring mix back to the boil & cover and simmer until the mussels open.
Step 4
Making sure to discard any mussels that do not open.
Step 5
Serve with scattered parsley over the top.
Step 6
Serve with fresh crusty bread.
