Ingredients

The ingredients are:
  • 2 kg mussels (fresh, cleaned, scrubbed and de-bearded)
  • 2 tablespoons olive oil
  • 15 grams garlic clove, peeled & finely chopped or micro planed (2 garlic)
  • 150 grams red onion (spanish onion, medium, finely chopped)
  • 15 grams red chili (seeded and finely sliced, 1 chili red or add another chili if desired)
  • 2 teaspoons sugar (raw)
  • 56 grams tomato paste (1/4 cup )
  • 1 can (440 grams) diced tomatoes, drained
  • 60 ml dry white wine (1/4 cup)
  • 2 tablespoons capers, drained and finely chopped
  • 2 bay leaves
  • 2 tablespoons basil, fresh finely chopped
  • Black pepper to taste, freshly ground
  • Salt, pinch of to taste
  • 3 tablespoons chopped fresh parsley (to serve)

How to Make

  • Step 1: Make sure the mussels are scrubbed clean and the beards removed.

  • Step 2: Heat the oil in a heavy pan, add onions and garlic and cook onions until soft; add the chili, tomato paste, wine, tomatoes, sugar, bay leaves and capers and bring to boil, and when boiling reduce the heat and simmer until the tomato sauce thickens.

  • Step 3: When sauce has thickened a little add the mussels, bring mix back to the boil & cover and simmer until the mussels open.

  • Step 4: Making sure to discard any mussels that do not open.

  • Step 5: Serve with scattered parsley over the top.

  • Step 6: Serve with fresh crusty bread.
