Step by Step Method

Step 1

Note : The easiest way to remove the sausage from the casing is to snip the casing lengthways with kitchen scissors.

Step 2

According to the packet directions; cook the pasta in a large saucepan of salted boiling water, until al dente.

Step 3

Remove sausage casing and roughly chop the sausage meat.

Step 4

While the pasta is boiling, heat a deep, large frying pan over medium-high heat; add 1 tablespoon oil and the chopped sausage meat & cook, stirring for 5 minutes or until just cooked through and lightly colored; transfer to a bowl, cover to keep warm

Step 5

Add the remaining oil to the hot pan, and over a medium heat (being carefully not to burn the chili or garlic) add the chili, garlic and mushrooms, turn heat up a little and cook, stirring for 4-5 minutes or until mushrooms are tender

Step 6

Return the sausage meat, add cherry tomatoes then stir in the oregano & basil & bring to a simmer; simmer uncovered for 4-5 minutes or until sauce has reduced slightly

Step 7

Drain the pasta and return it to the hot pan; add the sauce and spinach and gently toss over low heat to combine.

Step 8

Season with salt and pepper and serve with parmesan and serve with some crusty bread.
