Ingredients

The ingredients are:
  • 300 grams rigatoni pasta
  • 300 grams raw pork or italian sausages, skins removed, (see tip)
  • 2 tablespoons olive oil
  • 1/2 - 1 long red chilli, chopped or 1/4 to 1/2 teaspoon crushed red pepper flakes
  • 1 -2 clove garlic, minced
  • 200 grams button mushrooms, sliced
  • 200 grams portobello mushrooms, sliced
  • 400 gram can cherry tomatoes
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried basil
  • 60 grams baby spinach leaves
  • Grated parmesan, to serve

How to Make

  • Step 1: Note : The easiest way to remove the sausage from the casing is to snip the casing lengthways with kitchen scissors.

  • Step 2: According to the packet directions; cook the pasta in a large saucepan of salted boiling water, until al dente.

  • Step 3: Remove sausage casing and roughly chop the sausage meat.

  • Step 4: While the pasta is boiling, heat a deep, large frying pan over medium-high heat; add 1 tablespoon oil and the chopped sausage meat & cook, stirring for 5 minutes or until just cooked through and lightly colored; transfer to a bowl, cover to keep warm

  • Step 5: Add the remaining oil to the hot pan, and over a medium heat (being carefully not to burn the chili or garlic) add the chili, garlic and mushrooms, turn heat up a little and cook, stirring for 4-5 minutes or until mushrooms are tender

  • Step 6: Return the sausage meat, add cherry tomatoes then stir in the oregano & basil & bring to a simmer; simmer uncovered for 4-5 minutes or until sauce has reduced slightly

  • Step 7: Drain the pasta and return it to the hot pan; add the sauce and spinach and gently toss over low heat to combine.

  • Step 8: Season with salt and pepper and serve with parmesan and serve with some crusty bread.
