Step by Step Method
Step 1
Heat oil in fry pan & add the mushrooms, garlic and chili & fry off for about 2 minutes over a low heat.
Step 2
Add the sherry, lemon juice & crumble in the stock cube then season to taste with the ground black pepper.
Step 3
Turn the heat to medium-low and let the mixture simmer, uncovered, for about 10 minutes or until mushrooms have released their juices; cook for 3 minutes more, or until the juices have reduced by half.
Step 4
Season with salt and pepper, garnish with parsley, and serve with crusty bread, if desired, for mopping up the juices.
