"Very easy recipe. I like to use Coeur de Lion cheese but sub Brie or any soft cheese. Do not over cook the mushroom/ pepper /onions combination. If you like try different mushrooms but the every day white ones work just s well."

Step by Step Method

Step 1

Place 1 tbsp oil in large skillet, medium heat

Add peppers & onions

Step 3

Stir fry for 3 minutes

Add mushrooms continue frying for 2 more minutes

Meanwhile whisk together the eggs, cream, & cheese

Step 6

Pour beaten egg mixture into the pan with cooked veggies

Step 7

Let the eggs settle and then lift and fold them over several times until . they are cooked

Serve on toast or a bagel

Sprinkle on the chopped parsley
