Mushroom, Onion and Spinach Soup
"I found this on a keto website and it sounded great! I just made it tonight and it was yummy, but in the future I would not bother to open a can of coconut milk for just 1/2 cup - I'll use milk or 1/2 and 1/2 instead. Also, I was too cheap to buy shitake mushrooms, just used about 4 cups of baby bella mushrooms."

Step by Step Method
Step 1
Heat oil in a soup pot, then add onions. Sauté until onions are golden brown, about 10-15 minutes.
Step 2
Add garlic, salt and pepper and mushrooms. Cook until mushrooms are softened and golden.
Step 3
Add broth and bring to a boil. Add spinach. Reduce heat to low then simmer, covered for 10 minutes.
Step 4
Stir in coconut milk.
Step 5
Taste if more salt and pepper are needed.
