Step 1: Heat oil in a soup pot, then add onions. Sauté until onions are golden brown, about 10-15 minutes.
Step 2: Add garlic, salt and pepper and mushrooms. Cook until mushrooms are softened and golden.
Step 3: Add broth and bring to a boil. Add spinach. Reduce heat to low then simmer, covered for 10 minutes.
Step 4: Stir in coconut milk.
Step 5: Taste if more salt and pepper are needed.
