Ingredients

The ingredients are:
  • 2 tablespoons extra virgin olive oil
  • 1 cup sweet onion, sliced to about 1/2” thickness
  • 4 cloves garlic, minced
  • 1 teaspoon pink or sea salt
  • 1/2 teaspoon cracked pepper
  • 2 cups shitake mushrooms, whole
  • 2 cups sliced baby bella or cremini mushrooms
  • 4 cups chicken or vegetable broth (organic and gluten-free, if you want)
  • 2 cups baby spinach, roughly chopped into bite sized pieces
  • 1/2 cup coconut milk or any kind of milk or cream

How to Make

  • Step 1: Heat oil in a soup pot, then add onions. Sauté until onions are golden brown, about 10-15 minutes.

  • Step 2: Add garlic, salt and pepper and mushrooms. Cook until mushrooms are softened and golden.

  • Step 3: Add broth and bring to a boil. Add spinach. Reduce heat to low then simmer, covered for 10 minutes.

  • Step 4: Stir in coconut milk.

  • Step 5: Taste if more salt and pepper are needed.
