Step by Step Method

Step 1

Melt butter. Add mushrooms, green onion, and pepper. Sweat down.

Step 2

Add beaten eggs. Add cheese on half side, saving a little for top. Add spinach.

Step 3

You can add bacon here on top of cheese and spinach.

Step 4

Flip over plate.

I love the flavour and Colour combination it looks so attractive on your plate and tastes so Mmmm. I used 2 jumbo eggs and it was huge. I will make this again.

Could not get muenster cheese so used an slice of American red cheddar which I just cut up small and added to the inside of the omelet and served my bacon on the side. I cooked my bacon using my recipe of http://www.recipezazz.com/recipe/cook-bacon-in-microwave-or-frypan-14749 (using the frypan) and then added some butter to the bacon fat to cook the mushrooms and the green onion removed this from the frypan and added the egg and once egg was nearly set added the mushroom and onion back in with the cheese on half the omelet topped with the spinach and folded over and served up a delicious and filling breakfast, thank you dienia b made for Pick Me tag game under the 48 hour rule.
