"Found @ realsimpledotcom & credited to Sarah Copeland - This recipe appealed to me because of it's ingredients & easy-fix method, but it needed a direction IMO. When a list of ingredients ends & prep begins, that's when my imagination takes over & envisions what a recipe will be when it "grows up". This recipe has so many ways it can go: It's the start of an antipasto course if expanded by other ingredients. It's the start of a bruschetta appy if set atop garlic-buttered bread. It's a green salad if combined w/lettuce & flavored-croutons. It's a pasta salad if you add whatever pasta or other ingredients you have on-hand. Mushrooms would be great w/all the options. It works for families, guests, potluck, etc. See what I mean? Your imagination drives the recipe where you take it. I esp like this type of recipe. ENJOY!"

Step 1

Whisk together the oil, honey & lemon juice.

Step 2

Divide the mozzarella, salami, olives & mint among 4 plates. Drizzle w/the dressing.
