Step by Step Method
Step 1
Preheat oven to 400°F. Coat a 12 muffin tin with nonstick cooking spray or use paper cupcake liners.
Step 2
Combine wheat bran, flour, baking soda and baking powder. Stir in walnuts and dried cranberries.
Step 3
In a separate bowl, blend milk, molasses, applesauce, oil and egg. Add to dry ingredients and stir just until moistened.
Step 4
Spoon into prepared muffin tin (or paper muffin cups) and bake for 15-20 minutes.
Step 5
Cool on wire rack for 10 minutes before serving.
