  • 1 cup wheat bran
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup walnuts, chopped
  • 1/2 cup dried cranberries
  • 1 cup milk
  • 1/2 cup molasses
  • 3/4 cup applesauce
  • 2 tablespoons oil
  • 2 large eggs (beaten)

How to Make

  • Step 1: Preheat oven to 400°F. Coat a 12 muffin tin with nonstick cooking spray or use paper cupcake liners.

  • Step 2: Combine wheat bran, flour, baking soda and baking powder. Stir in walnuts and dried cranberries.

  • Step 3: In a separate bowl, blend milk, molasses, applesauce, oil and egg. Add to dry ingredients and stir just until moistened.

  • Step 4: Spoon into prepared muffin tin (or paper muffin cups) and bake for 15-20 minutes.

  • Step 5: Cool on wire rack for 10 minutes before serving.
