Step by Step Method
Step 1
Very finely grate the ginger onto a plate.
Step 2
Pour the grated ginger and any juices into a fine sieve and press the ginger over a bowl to collect all the juice.
Step 3
Stir the juice into the yogurt.
Step 4
Divide the melon between 2 serving bowls, top with ginger yogurt.
Step 5
Garnish the yogurt with shredded mint and chopped crystallized ginger .
